Menu Plan Monday


I'm still using up lots of garden produce, as well as preparing for my mom's arrival at the end of the week. Calvin & Gen picked a bucketful of blackberries outside our house yesterday, so I'll definitely be tossing those in with some meals, too! (We mixed some in with our Sunday morning porridge today.)

Calvin's birthday is on Friday (but we plan to celebrate on Saturday with my mom), so I'm planning a birthday dinner for him. And obviously, anything is subject to change, depending on baby's arrival! :)

Monday
  • Breakfast: Eggs, Toast
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Zucchini "Pasta" with Salmon Sauce, Watermelon
To Do: Soak Beans, Thaw Beef, Make Sunflower Seed Butter

Tuesday
  • Breakfast: Granola or GF Muesli, Yogurt, Eggs
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Bean Taco Salad, Bread & Butter
To Do: Soak Millet

Wednesday
To Do: Make Sourdough Bread, Soak Rice, Thaw Chicken

Thursday
To Do: Bake GF Bread

Friday
  • Breakfast: Eggs, Toast
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Greek Lemon Soup (with leftover Rice), Green Salad, Yogurt
To Do: Bake Birthday Cake

Saturday
  • Breakfast: Breakfast Millet (w/cinnamon & blackberries), Eggs
  • Lunch: Peanut Butter Sandwiches, Green Salad
  • Dinner: Beef Stroganoff over Zucchini "Noodles," Watermelon, Birthday Cake, Ginger Ale
To Do: Soak Porridge, Soak Beans

Sunday
  • Breakfast: Oat or Buckwheat Porridge, Blackberries, Eggs
  • Lunch: Cheese Sandwiches, Carrot Sticks
  • Dinner: Thai Black Bean Lettuce Wraps, Bread, Watermelon
To Do: Soak Pancake Batter, Soak Beans, Thaw Roast, Soak Rice

  3. I just stumbled upon your blog and I wish I had seen it eons ago!! I LOVE your sewing projects section & links. My second babe is 5 months old now, and I sure wish I had seen that list earlier, though I did send it to my pregnant SIL for her benefit!
    I love your menu plans, also, is someone is your family a celiac? I was diagnosed in 2005, and love that you do a lot of GF baking!

    Yes, I have celiac. Thanks for stopping by! :)

    The gluten-free bread is usually something I just toss together with a combination of GF flours; I don't always follow a recipe. But Bob's Red Mill has some good recipes, if you're looking for a good place to start! :)

  5. Looks like a wonderfully yummy menu. :) I made up a menu, but never got to post it. I might tomorrow. We do our shopping on Tuesday for the whole week.
