Weekly Menu Plan
I'm doing a bunch of "reusing leftovers" types of recipes this week, after our week of company meals. So, sorry, no recipe links this week; just some basics.
Sunday
• Breakfast: Oat or Buckwheat Porridge, Eggs
• Lunch: Cheese Slices, Popcorn, Apples, Homemade Pickles
• Dinner: Chicken/Veggie Soup (use leftover chicken/bones), Bread
To Do: Soak Brown Rice
Monday
• Breakfast: Eggs, Toast
• Lunch: Cottage Cheese, Bread, Carrot Sticks
• Dinner: Stroganoff (use leftover elk), Brown Rice, Yogurt, Baked Apples
To Do: Bake GF Bread, Soak Beans, Soak Millet
Tuesday
• Breakfast: Millet with Apples, Eggs
• Lunch: Cheese Sandwiches, Carrot Sticks
• Dinner: "Taco" Casserole (with beans & leftover brown rice), Yogurt, Sauteed Zucchini
To Do: Soak Pancake Batter
Wednesday
• Breakfast: Buttermilk Pancakes, Eggs
• Lunch: Salmon Salad Sandwiches, Peach Smoothies (from freezer)
• Dinner: Spaghetti Squash & Cheese, Apples, Fried Green Tomatoes
To Do: Make Sourdough Bread
Thursday
• Breakfast: Eggs, Toast
• Lunch: Cheese Sandwiches, Apples
• Dinner: Pizza with White Sauce & Spinach, Carrot Sticks
To Do: Soak Porridge, Thaw Beef
Friday
• Breakfast: Porridge with Peanut Butter
• Lunch: Egg Salad Sandwiches, Carrot Sticks
• Dinner: Cream Cheese & Herb Omelets, Bread, Baked Apples
To Do: Thaw Green Beans
Saturday
• Breakfast: Eggs, Toast
• Lunch: Peanut Butter Sandwiches, Green Beans
• Dinner: Baked Stuffed Squash, Bread
To Do: Soak Porridge, Pick Up Milk, Soak Beans
