Nourishing Frugal Food: Peanut Sauce

Kimi at The Nourishing Gourmet and Stephanie at Keeper of the Home are hosting a wonderful "Nourishing Frugal Food" Carnival!  I've been looking forward to it all week.  This week, the topic is Main Dishes.  By request, I'm sharing my much-loved, and often-used Peanut Sauce recipe.  (It's much more economical than buying those fancy jars of Asian Peanut Sauce!)  


We usually use the peanut sauce on stir-fried veggies (whatever is in the freezer or in season) or on a pizza.  (We love this Thai Pizza on a homemade whole wheat crust!)  I usually serve stir-fry over rice or millet, but this is also a good sauce to serve over noodles (hot or cold), along with some chilled veggies (cucumber, green onions, carrot, peppers, snow peas, etc.)  

These all make wonderful leftovers to pack in Calvin's lunches, too.  It's made with basic pantry staples, so it's my fall-back recipe when the refrigerator's looking bare, or we need a quick meal to toss together.  

Peanut Sauce
1/4 cup Peanut Butter (I use creamy)
3 Tbl. Bragg's Liquid Aminos (or soy sauce or tamari)
2 1/2 Tbl. Vinegar (I like red wine vinegar)
2 Tbl. Sugar (I use Rapadura)
3 Tbl Water
1/2 -3/4 Tbl. Dry Mustard (You can use up to 1 Tbl, if you like it really spicy!) 

Mix everything together in a bowl, stirring until smooth.  Pour over veggies/pasta/grain of your choice.  

If pouring over a stir-fry, it's usually enough to cover 4-6 cups of veggies.

I love peanut sauce! I mix mine with leftover spaghetti. In fact, I usually make extra spaghetti just so I can have it with PB sauce! Your recipe looks delicious and I'm definitely going to give it a try.
