Menu Plan Monday

This week, I am cooking with some of the different grains and legumes from my co-op order. (To read more about this month's groceries & meal preparation for our family, go here.) Here is this week's menu plan:
Monday
Dinner: Chicken & Vegetable Stir Fry, with leftover Brown Rice and Homemade Teriyaki Sauce
To Do: Soak Porridge, Lentils, Muffin Batter, and Cornmeal Batter for Tuesday. Start Sprouting Sunflower Seeds
Tuesday
Breakfast: Orange Smoothies (substitute a fresh orange and homemade yogurt; reduce sugar), Nourishing Traditions Porridge (with Steel-Cut Oats), Turkey Bacon
To Do: Soak Muffin Batter for Wednesday.
Wednesday
To Do: Soak Waffle Batter, Baby Porridge Grains, and Brown Rice for Thursday. Start thawing Chicken for Saturday. Make Oatmeal Wheat Germ Crackers (from Super Baby Food), and Butter
Thursday
Lunch: Curried Carrot Soup (from Simply in Season), Homemade Yogurt, Green Salad with Nourishing Traditions Balsamic Dressing & Sprouted Sunflower Seeds, Homemade Bread & Butter
To Do: Bake Bread, Make Mayonnaise and Super Baby Porridge, Soak Muffin Batter, Lentils, and Tortilla Batter for Friday
Friday
Breakfast: Nourishing Traditions Basic Muffins, Eggs, Fresh Carrot/Fruit Juice
Lunch: Turkey BLT's on homemade bread, Orange Slices, Carrot Sticks
Dinner: Lentil Tacos on Homemade Tortillas, Green Salad with "Summer Night Dressing" (from More With Less) & Sprouted Sunflower Seeds
To Do: Make Cereal Flakes (from Super Baby Food). Soak Barley for Saturday.
Saturday
Sunday
Breakfast: Nourishing Traditions Muesli, Eggs, Fresh Carrot/Fruit Juice
Lunch: Chicken Salad & Sprouted Sunflower Seed Sandwiches on homemade bread, Apricot Glazed Carrots, Orange Slices

I love your week! Your list of to-do's sounds perfect. What a great idea. I really would like it if our family was eating better. Reading about all the wonderful foods that you prepare for your family really makes me want to start pushing myself to do this more.
I love how you plan out nice breakfasts. I usually just have oatmeal every morning. Thanks for the comments on the recipes! I haven't made the bulgur breakfast yet, but it's something I'm going to try instead of oatmeal for breakfast... Basically, you cook bulgur with cinnamon, brown sugar, and apples (or other things that are good in oatmeal). But I went to Trader Joe's and they didn't have it, and my local Safeway didn't have it, so I have to find out where I can get some!

It already helps me a lot to plan the menu, but this is taking it just that bit further. Excellent plan.

Soaking grains is next on my list of things to learn to do. I think I'll have to get that Nourishing Traditions book one of these days!
