Menu Plan Monday


I'm waiting for my co-op order to arrive at the end of the week (which includes lots of grains, flour, and legumes).  Until then, I'm using quite a few pantry/freezer items that I already have on hand.  Here is this week's menu:  


Monday
Dinner: Roast Chicken, Canned Apricots, Green Salad, Homemade Bread
(Save chicken carcass to make stock.)  

Tuesday
Breakfast: Poppy Seed Muffins, Eggs, Fresh Carrot/Fruit Juice
Lunch: Black Bean Soup, Yogurt, Baked Corn Chips, Orange Slices
Dinner: Sausage/Apple/Sweet Potato Casserole (with homemade Nourishing Traditions ground turkey sausage), Green Salad, Homemade Bread

Wednesday
Breakfast: Pancakes, Fresh Carrot/Fruit Juice
Lunch: Chef Salad (with sliced turkey, eggs, cheese, and sunflower seeds), "Shake It Up" Dressing (from Super Baby Food), Orange Muffins
Dinner: Salmon Patties, Brown Rice, Carrot Sticks

Thursday
Breakfast: Brown Rice Pudding with Yogurt (from Super Baby Food), Eggs, Orange Smoothie (substitute fresh orange and yogurt; reduce sugar)
Lunch: Broccoli Oven Pancake (from Simply In Season), Green Salad
Dinner: Thai Chicken & Carrot Pizza (with homemade whole wheat crust), Orange Slices

Friday
Dinner: Persian Kidney Beans, Polenta (from Super Baby Food), Apricot Glazed Carrots

Saturday
Dinner: Skillet Corn Chowder, Garlic Sesame Broccoli, Homemade Bread
Make Buttermilk Ranch Dressing (from Whole Foods Cookbook)

Sunday
Breakfast: Nourishing Traditions Muesli, Fresh Carrot/Fruit Juice
Lunch: Chicken Quesadillas (make Homemade Tortillas on Sat.), Orange Slices
Dinner: Vegetarian Meatloaf (from freezer), Carrot Sticks, Steamed Spinach

Your weeks always sound so delicious and healthy! I love the cornchip recipe. I might even make it tomorrow. We're down to an awfully empty pantry here too, but I have all the ingredients I'd need for those, and I know my kiddos would love them!

I have really enjoyed reading your blog and getting to know you a bit better.

Congratulations on your dresses. I have had to get different wardrobes for different body shapes:Pregnant, breastfeeding and not either of those. God has provided every time. Modest is always hard to find, no matter what:)
I have been the happy recipient of my mother's sewing talent. She is talented in that and in finding deals. You know what is coming soon? Garage sale season-woo-hoo.

If you come to Randle this summer, we should do the garage sale thing. Rebecca loves to go too.

Michele, I just wanted to let you know that we made the corn chips today and they turned out great! Everyone loves them. I added flax seed, about 1/4 c., that I toasted with my corn meal to give them a more authentic look, and boost health benefits a bit. I also added cumin, garlic salt, and cayenne pepper. These are definitely joining our regular snack rotation. How did yours turn out?
